There is nothing like homemade granola. This crunchy recipe has coconut flakes, pecans and a touch of honey. This is amazing on top of yogurt, to go snack or eat it as a cereal.
Ingredients:
3 Cups old fashion oats
1 cup coconut flakes, sweetened or unsweetened
1 cup pecans
1/4 cup honey
1/4 brown sugar
3 tbsp. coconut oil
1/2 tsp. vanilla
Directions:
- Preheat oven to 250 degrees F.
- In a large bowl, combine the oats, nuts, coconut flakes, and brown sugar.
- In a separate bowl, combine coconut oil, and honey and microwave for 30 seconds. Add vanilla & stir.
- Mix honey oil mixture into oats and stir well.
- Spread out onto a baking sheet, evenly.
- Cook for 1 hour, stirring every 15 minutes to achieve an even color.
- Remove from oven (may seem soft but will harden after a few minutes) and transfer into a large bowl.
- Eat & Enjoy!
