Crispy Sweet Potato Chips



I am a big fan of sweet potatoes. I will eat them when ever I can. So, one morning I woke up thinking why not make chips out of them and I did. To my surprise it was easy and delicious. Though my first batch didn't come out 100% the way I wanted them too but I kept trying until I perfected that perfect chip. I have inserted a small clip on the secret to a good chip.

Ingredients: 

4 sweet potatoes
2 cups peanut oil
salt to taste






Directions: 

  • In a large pan heat your peanut oil on medium until it reaches 350 degrees. If you don't have a thermometer toss one slice of the sweet potato into the oil, if it starts to sizzle and fry then your ready to go. Please use peanut oil or another high temp oil. This will help prevent it burning to fast.
  • While your oil is heating up, use a mandolin to slice your sweet potatoes. I use a low setting for a thin slice. Don't make it to thick or it will not cook right. 
  • when your oil is ready, place about 30 slices into the oil and move it around until it is ready to remove. Do not let it sit otherwise it will brown. Moving the slices around will prevent browning and give an even cooking. 
  • You will be able to tell when they are done when the sizzling begins to slow down. Remove from heat and place on a paper towel to drain.
  • Add a sprinkle of salt to taste
  • Let sit on a paper towel until it has completely cooled off and drained off all the oil. Then you can store in an airtight bag. Please do not place in a bag while still warm with to much oil. If you do it will turn soft. 
  • ENJOY!
