Light & Fluffy Buttermilk Chocolate Chip Pancakes




Ingredients:

2 cups all-purpose flour
1/4 cup sugar
2 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 cups buttermilk OR
   *(2 cups milk with 2 tbsp white vinegar & allow to sit for 5 minutes)
1/4 cup melted butter, plus some for frying
1/2 cup chocolate chips or any fruit such as blueberry's










                                     





Directions:
  • In a large bowl sift together the flour, sugar, baking powder, baking soda, and salt.
  • Beat the eggs with the buttermilk and melted butter. Combine the dry and the wet ingredients into a lumpy batter, do not over mix. Batter is suppose to be lumpy








  • Heat some butter in a skillet over medium heat. Spoon 1/3 cup of batter into the skillet and sprinkle the top with some of the chocolate chips. If you mix your chocolate chips into the batter, chips will sink to bottom of bowl. Cook for 2 to 3 minutes on each side.
