Southern Collard Greens



I was raised and brought up with a southern family. I didn't realize how much I would miss my moms home cooking until I had married and moved away. Now that I am a mother and wife, I try to make all the fix'ins I grew up with during the holidays. This recipe is everyone's favorite, even those who thought they didn't like greens.


Ingredients:
2 bags already washed and chopped collard greens
1 pack Applewood smoked bacon
1 onion chopped
1 large tomato chopped
3 garlic cloves minced
3/4 cup white sugar
1 tsp salt
1/2 tsp black pepper

Directions:

  • Slice your bacon into pieces and fry it in a large pot on medium heat until brown and crispy. 
  • Once your bacon is crispy add your diced onion, stir and reduce heat to medium/low temp. Let onion cook for a few minutes until soften. 
  • When your onion is soft add one bag of collard greens into the pot with a cup of water. If you are able to add both bags at this time do so. If not, then just the one bag and give it a stir and cover. Cook for five minutes until the greens go down a little bit in size. 
  • Now add tomato, garlic, sugar, salt and pepper. No need to stir at this time. If there is space add a few more greens to the pot. Then return cover and cook for another five minutes.
  • After the five minutes, stir your greens and again add some greens from the second bag. You might not be able to add all but that is fine. Continue to add greens little by little until all the greens are in the pot. 
  • Once all the greens are in the pot continue to cook on low until they are done. May take up to 2 hours but should take no longer. 
  • Serve and Enjoy!
