Super Moist Banana Bread


This is one of the BEST Banana Breads I have ever tasted. Trust me, this recipe is a keeper.


Ingredients:

2 eggs
1 cup of milk with 1 tablespoon of vinegar, let sit for about 5 minutes, this is homemade buttermilk :)
1/2 cup vegetable oil
2 medium bananas mashed
1 cup of white sugar
1/2 cup of brown sugar (dark or light)
1 3/4 cup of shifted all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup golden raisins (optional)
1/2 cup walnuts (optional)


Directions:

Preheat oven to 325. Spray a bunt or bread pan very well with cooking spray.  In a large bowl shift the flour, sugar, baking soda, salt, cinnamon & nutmeg. In a separate bowl blend together the eggs, homemade butter milk, oil and bananas. Add the flour mixture. If using raisins and walnuts add now and mix. Pour the mix into your baking pan and bake for 1 1/2 hours for a bread pan or 1 hour 20 minutes for a bunt pan or until a cake tester comes out clean.
